Fibre-Rich Pink Lamington Bliss Balls

A fun, fibre-rich snack packed with oats, dates, and raspberries to support digestion and boost immunity. Vanilla and choc chips make them extra kid-friendly, while coconut adds that lamington flair.

For an added boost, we’ve included Bio Blends Organic Daily Greens + Reds, bringing a concentrated dose of plant-based phytonutrients.  Think of it as bonus goodness from nature’s rainbow – a simple way to support growing bodies and gently broaden the variety of plants even for fussy eaters.

Ingredients:

  • 1 cup medjool dates, pitted
  • 1/2 cup frozen raspberries
  • 1 cup rolled oats
  • 2 heaped tsp’s of Bio Blends Organic Daily Greens + Reds powder
  • 1/4 cup desiccated coconut (+ a little extra for rolling)
  • 1 tablespoon vanilla extract
  • 1/4 cup mini chocolate chips or chopped dark chocolate (Option to choose DF)
  • 2 tablespoons of nut butter (Almond, peanut or cashew butter)
  • 2 tbsp of hemp seeds 
  • A pinch of pink Himalayan salt (optional, for flavour balance)

 


Method:

1. Prepare dates:

  • Soak the pitted dates in boiling water for about 10 minutes to soften them. Drain the water.

2. Blend the base:

  • In a food processor, add the soaked dates, frozen raspberries, rolled oats, vanilla extract, hemp seeds, nut butter, and salt. Blend until the mixture is well combined and sticky, but still has some texture.

3. Add chocolate chips & Bio Blends Organic Greens & Reds powder:

  • Fold through the mini chocolate chips or chopped chocolate.
  • Sprinkle in the greens & reds powder and mix through.

4. Check consistency:

  • If the mixture is too dry, add a teaspoon of water at a time until the texture is moldable. If it’s too wet, add a bit more oats to thicken it.

5. Form the bliss balls:

  • Roll the mixture into small balls, about 1 tablespoon each. You should end up with around 12-16 balls, depending on the size.

6. Coat with coconut:

  • Roll each ball in shredded/desiccated coconut to give it that classic lamington texture.

7. Freeze:

  • Place the balls on a baking tray lined with parchment paper and freeze for at least 30 minutes to set.

8. Serve and enjoy:

  • After freezing, your bliss balls are ready to enjoy! Store them in an airtight container in the fridge for up to a week, or in the freezer for up to 3 months.
     

Note: If adding Bio Blends Organic Daily Greens & Reds powder, these are suitable from 3 years and older.
