
Mini Raspberry Coconut Chia Puddings
These mini raspberry puddings are a lovely treat - bursting with vibrant flavour and packed with nutrients. They combine antioxidant-rich raspberries, fibre and omega-3-packed chia seeds, creamy coconut milk, and a boost of vitamins and antioxidants from Organic Daily Greens & Reds powder for extra nourishment. Topped with coconut yoghurt and toasted coconut flakes, they're a delicious way to enjoy a healthy boost anytime.
Serves 4. Dairy-Free, Gluten-Free, Vegan.
Time: 15 minutes (excluding chilling)
Ingredients:
Raspberry Chia Pudding:
- 1/2 cup raspberries (fresh or frozen)
- 1/2 cup coconut milk (carton style)
- 2 tsp Organic Daily Greens & Reds
- 1 tbsp chia seeds
To Serve:
- Coconut yoghurt
- Fresh raspberries
- Toasted coconut flakes
- Dried rose petals (optional)
Method:
- Blend raspberries, coconut milk, and Organic Daily Greens & Reds until smooth.
- Stir through chia seeds, then pop the mix in the fridge for at least 20 minutes to thicken.
- Spoon the raspberry chia pudding into your serving dish. Top with coconut yoghurt, fresh raspberries, toasted coconut flakes, and rose petals if using. Enjoy!
Notes: Store in an airtight container in the fridge for up to 3 days.
