Mini Raspberry Coconut Chia Puddings

These mini raspberry puddings are a lovely treat - bursting with vibrant flavour and packed with nutrients. They combine antioxidant-rich raspberries, fibre and omega-3-packed chia seeds, creamy coconut milk, and a boost of vitamins and antioxidants from Organic Daily Greens & Reds powder for extra nourishment. Topped with coconut yoghurt and toasted coconut flakes, they're a delicious way to enjoy a healthy boost anytime. 

Serves 4. Dairy-Free, Gluten-Free, Vegan.
Time: 15 minutes (excluding chilling)

Ingredients:

Raspberry Chia Pudding:

To Serve:

  • Coconut yoghurt
  • Fresh raspberries
  • Toasted coconut flakes
  • Dried rose petals (optional)

Method:

  1. Blend raspberries, coconut milk, and Organic Daily Greens & Reds until smooth. 
  2. Stir through chia seeds, then pop the mix in the fridge for at least 20 minutes to thicken. 
  3. Spoon the raspberry chia pudding into your serving dish. Top with coconut yoghurt, fresh raspberries, toasted coconut flakes, and rose petals if using. Enjoy!

Notes: Store in an airtight container in the fridge for up to 3 days.
